This site is part sake field guide, part tasting journal, part homebrewing diary, and entirely the product of a Texan’s deepening obsession with one of the world's most remarkable beverages.

Kindling Curiosity

Why We Created Mockingbird Sake

Curiosity is what brought us here, and curiosity is what we hope to kindle in you. Sake is one of those subjects that rewards the inquisitive. One bottle opens a door to three more, and before long you realize you have stumbled onto a craft genuinely vast and genuinely beautiful.

Most people in the USA have not had a real introduction to sake, and that is not a criticism, it is just an opportunity. There is a whole world waiting on the other side of that small menu section at your local sushi bar. Eight grades. Dozens of styles. A thousand years of brewing tradition.

We built Mockingbird Sake to be that introduction. To take you from wherever you are starting and walk alongside you toward something a little richer. Come curious. Leave knowing more than you did.

Origins

Our Sake Story

Every obsession has an origin story, and ours is no different. It started quietly, sometime around November 2023, when we realized we had been photographing every sake we liked with a thumbs up and calling it a tracking system. Pretty hard to reference, but it was a start.

From there it snowballed the way good obsessions do. A homebrewing adventure in November 2025. Several ceramics courses taken for the sole purpose of learning to throw our own . And in April 2026, a Certified Sake Professional credential earned under the instruction of John Gauntner, one of the foremost sake educators in the world. Somewhere in the middle of all of it, Mockingbird Sake got its name, and if you want to know why, that story lives here.

We are still newcomers to this. The palate is still developing, the brewing setup is still evolving, and there is always another sake we have not tried yet. But that is exactly the point. Mockingbird Sake is not the view from the top of the mountain. It is the climb, documented honestly, one bottle at a time.

How We Work

Mockingbird Sake is as much a learning tool for us as it is for you. We’ve just started our sake journey and as we learn something new, we'll share it here with as much fact-checking, source-sharing, and forthrightness as we can muster.

This site is also a quiet homage to the kind of web that used to exist before everything became an algorithm. No ads, no marketing agenda.
